Oat Flour Banana Cookies Prep Time: 5 minutes mins Cook Time: 13 minutes mins Course: Breakfast, Dessert, Snack Servings: 8 cookies Ingredients 1 cup oat flour 1/3 cup overripe mashed banana it is important that the banana is very overripe for optimal sweetness 1/2 teaspoon vanilla extract 1-2 teaspoons maple syrup for extra flavor and sweetness optional but recommended Instructions Preheat oven to 325 degrees and line a baking sheet with parchment paper. In a medium bowl pour 1 cup oat flour. Add the banana, vanilla, and optional maple syrup and stir until combined. Drop spoonfuls of dough onto pepared baking sheet and flatten into desired thickness (they do not spread in the oven). ECE Brain Development Course - Provocation #1 Twinkle Twinkle Little Star Provocation - Provocation #2 Find below, a star wand, I made while on placement #1. These wands, are meant for teaching fine motor skills such as sprinkling, glueing, and sticking items together. The group, I was with were infants and could be a great craft to put together, as the wands can be made ahead of time, while supplies such as feathers and stickers can be provided to infants to try to attach to the star wands!
